i love it when vacation happens without too much planning ahead of time . We had 2 back to back family events on consecutive weekends both in the northeast. Going to Niagara Falls in between seemed to fit in perfectly between the weekends. The first event was a Bharatha natya arangetram in New Jersey (debut dance performance) by my husbands grand niece. Her performance was par excellence and the accompanying artists were superb and in perfect harmony. They simply transported me to a divine state of mind.

I did not sway too much from LCHF. The hostess , my BH 's nephew's wife is very aware of my dietary needs and had stocked up on VCO,cottage cheese, eggs and green vegetables and salads. I had also carried coconut oil packets and they came in handy during sight seeing.
Niagara was a good 7 hour drive through Philadelphia,New York. The drive through the boonies and Appalachian mountains was a feast for the eyes. Tall trees and lush greenery all around felt like heaven.

At the Niagara, we did the cave of the wind tour where you walk through the underground close to the falls and experience hurricane like winds. We did "The maid of the mist" boat tour dropping 200 feet into the river . We were completely drenched despite the rain ponchos provided to us. This covered the U.S. side of the falls.

We drove to the Canadian side in the evening and just chilled with some wine of course watching the falls from the 18th floor of the hotel. The next day we took an early morning helicopter ride to capture the beauty of Niagara Falls and the horse shoe formation of the falls. The view was amazing. Drove back to the U.S side(my BH and his nephew were the driver). I could have driven but I wasn't added to rental car contract. Back to NJ for resting.

The next day morning we drove to Wales,PA to see a family friend who recently moved from Texas on the way to Delaware for my niece's graduation and 18th birthday party. The party was great with lots of tasty food. I tasted a peck of samosa and tiny piece of cake. Stayed far from other sweets. bhindi masala and paneer served my needs. I must have eaten more carbs than usual but still below the 100gm mark and we did plenty of walking. No BS testing even though I had taken my glucometer.

I love the abundance of nature in the north east and it was depressing to come back concrete jungle in Dallas. Dallas is in a growth spree thanks to many companies like Toyota moving in. I love Texas but missing the greenery of the north east. Winter is a different ball game there with below 30 temperatures. You want to be in Texas at that time.
